Crozier Blue is a remarkable Irish blue cheese made from sheep's milk. It is produced by the Cashel Farmhouse Cheesemakers, a family-run farm in County Tipperary, Ireland. Crozier Blue is the sister cheese to the famous Cashel Blue, which is made from cow's milk.

Crozier Blue boasts a rich, full flavour with a well-balanced blue tang. It has a creamy, slightly sweet taste with a hint of nuttiness and a gentle spicy finish. The texture is smooth and moist, making it perfect for spreading on crackers or bread.

Crozier Blue is one of the few blue cheeses made from sheep's milk, giving it a unique and distinct flavour. It is also handcrafted using traditional methods, with each wheel carefully matured for a minimum of three months to develop its full flavour.

Ageing Process & Production Methods:

Crozier Blue is made using traditional cheese-making techniques, with the cheese curds hand-ladled into moulds before being left to drain and mature. It is then pierced with stainless steel needles to encourage the growth of the blue mould, Penicillium roqueforti, which gives the cheese its distinctive blue veins. The wheels are aged for a minimum of three months to develop their full flavour and creamy texture.
